Did I do it?

I did a valve adjust a few fill ups ago.

I notice my gas mileage has decreased, about 20 miles per tank.

Also, it seems there is a tapping now. Associated with engine speed, cant hear it at idle or high rpm.

any thought?

How much did you have to adjust things?

Is it possible that you confused inch measurements with millimeters and used feelers marked in thousands of an inch instead of mm? (This is common with vintage bikes...) You'll end up with valve clearances about 2.5-3 times too large if this happens.

The other explanation is that perhaps you're a tooth off on the timing.

I agree with the post above. The sound you are hearing is the too loose sound. Far better than too tight. Adjust them again and make sure that the engine is completely cold.
