On my older bikes I've always added a "oil temp plug" and "rad temp" radcap it's nice to have a quick view of things
but I can't seem to find the right size (oil plug) and pressure (radcap) ...anyone else do this or have links for these parts ?

I just trust the water temp gauge. Normally 3 bars show.
Folks used to freak when they put an oil temp gauge on their BMW's and saw how hot they ran. But that's how they were designed. Not much different now but water cooling keeps things in check.
Then there are those, perhaps like you, that care to have that info handy. Can't say I've heard of any lately.

I have seen on ebay oil temp thermometers that screw into where you add oil on a v strom. They have a real short stubby shaft so as to leave the clutch alone. they are sold from England and they only come in celsius. I want farenheit and will wait for it to come along.
