I started a chain and sprocket swap on my '06 DL1K with 32,000 miles. My local shop sold me a JTF520.17 steel front sprocket. Comparing the old to the new I notice the JT sprocket doesn't seem to have the collar on sides of the teeth the stocker does. See the attached pictures. Is this ok?

Nope. They sold you the wrong one. You need a 525 width sprocket. The chain and rear sprocket are all the usual 525 size, aren't they? 530 is an optional size for chain & sprockets for longer chain life on Vees. The rubber ring is just a noise damper and only available on Suzuki sprockets.
