You're talking about the actual head, not just the valve cover, right?
If so, it looks like it can be done 'on-wing' according to the service manual, but in all honesty it might be easier to drop it out and have easy access to everything. That would be especially important once you reassemble and have to torque everything.
exhaust flange bolts drilling out stainless caused the bit to walk off to the side. broke pilot bit off on one of them. I think the head will need chucked up in a mill and the holes cleaned out, or a different head installed.

I'd think if the head would slide off while the motor is still in the bike the overall job would be faster than dropping the motor.
