How long should I expect it to take for the cheek pads to break in and soften up a bit on a new Bell? Just couldn't spring for another Arai, and I'm starting to wonder if I need to order the thinner cheek pads for this Bell.

On a Scorpion, I was able to pull the foam out of the cheek pads and slice off a layer of the foam. It was making my jaw ache.
Might have a look at yours.

Cheek pads break in after 40-80 hrs of wear depending on material and temperature.

I gave up....and went to thinner pads on my Qualifier, after 5000 miles.!
