Sometime in the next few weeks, assuming I can find the time, I intend to install my auxiliary lights. My inclination is just to have them always on. However, I have been considering having a dedicated on/off switch and to also have them able to go on with the highbeams. To do so, I need to tap in to the high beam wire. Is there any easy way to access that without taking off panels? I assume not; but, I thought I would ask. Thanks in advance.

Hope for there being a wire? Yes
Hope that you won't have to take off panels? No. Panels have to come off.

As a side note, if you're afraid of taking off the few panels on a Strom, are you sure you want to be mucking around cutting into wiring? There's a substantial step up in skill and technical ability between those two tasks if you want to be sure to not make a complete dog's breakfast of it.

Not sure if you've added a headlight relay or not, but I would suggest doing that as well if you haven't.
When I got my headlight relay kit from eastern beaver I chose the H4 coupler option so I didn't need to cut or tap any wires, just an easy-enough plug and play. The added advantage of this was that there was 1 original headlight plug no longer required - I just put a blade terminal on the end of a wire and pushed that into the high-beam socket - this was my high-beam trigger.
I had my side panels off when I did it, but I think you could probably do it with the H4 coupler option as you just need to feed wiring along the frame and then unplug/plug the sockets in, so no too fiddly in behind the headlights where it's tight for room.
As an aside, you can buy H4 sockets and terminals separately if you wanted to create your own pass-through plug and piggy-back off that - would still be able to just plug and play without having to cut into wires behind the headlights.

Push pins are really easy to work with. The hardest thing is not losing them after taking them out.

That little in pin the center has three positions. From the factory it is in the middle position. Push it in until it clicks with a blunt nosed instrument and it then the whole pin can be removed. Later when reassembling have the pin sticking above the surface of the pins body. Stick the whole thing back in the whole and the push the pin in until flush.

I'll bet there is a you tube video on it somewhere.

Not afraid. Always hated working with motorcycle plastics. Just a personal thing. I do it when necessary. More importantly, with a new to me bike, I always ask ahead of time to find out if there's another and simpler way. That always seems to simplify the process for me.

The other option is to get a plug that goes between the existing socket and the existing lamp and pick up the wiring to run your relay (HIGHLY recommended as Suzuki lighting electrics have earned a reputation for being run in tinsel) without cutting into the existing loom.

Depending on your model there is a headlight relay kit available from Eastern Beaver (or there used to be) that took the load off your starter button and could easily supply the current to run driving lights as well as the regular headlights. I made my own on my last Strom (I'm an electrician by trade) and made the wiring heavier again to reduce voltage drop to effectively nothing compared to the stock Suzuki tinsel wiring. With high output (NOT high wattage) globes and better wiring that Strom had the best headlights I've ever had on a bike, and better than more than a few cars as well. I don't know how the new under/over headlight compares in terms of light output.
