ADV Tires?

All,
I need to upgrade to some better tires so I can do ADV rides on my 650; considering the MITAS E-07 DAKAR, and was reading that I should go to a 120 front (vs stock 110) for better traction in sand (I live in Fl so there’s nothing but sand!).
IIRC (from my misspent youth drag racing cars) going to the next size wider tire with a lower profile works out to almost the same height: does this hold true for mc tires as well?
Has anyone done this, or will lowering tire pressure accomplish the same thing?
