Montreal - Translabrador - NFLD - Gaspé adventure 2UP

Hi All, I'm in the midst of planning an adventure from Montreal up the Trans-labrador highway, across into newfoundland, than up around Gaspé and back home.
Planning this on my 2009 DL1000 Strom with my fiancé on the back.

A little backstory;
I've ridden motocross/trails for over 10 years, and am very familiar with gravel. Although the DL1000 has not seen a ton of it.

My fiancé and I have been together for the better part of a decade, and she has logged more than 10000 km on the back of my motorcycles.
Last year we did 3700 km in 8 days from Montreal , through Maine , New Brunswick, Prince Edward Island, Cape Breton island, up to Meat cove, and back home.
We also did a 4 day ride from Montreal to Tobermory Ontario last year.

I'm wondering, has anyone on here completed this trip (or at least the Trans-lab) 2 up on a DL1000?
What provisions did you bring? How many extra liters of gas, etc.

I'm planning on having 2 gallons of GAS in rotopax or equivalent, also in the midst of building two 37L aluminum Panniers with flat tops so I can keep my COG lower than our last trip.

Any advice would be very much welcomed, and any nice stops along the way as well!
I'm also wondering, has anyone done this particular highway with SHINKO 705s? Will they be aggressive enough? (this is my current tire) If not, I will pick up some 804/805.

no advice/input but yeah Meat Cove is a favourite destination of mine. there is a nice trail from the campground to an overlook.

yeah Meat Cove and White point are both great areas to visit in Cape Breton. Got up to Meat Cove last year.
Also camping on Cheticamp island was my favourite stay of that whole trip apart from Deer Island New Brunswick
