I definitely like them. I saw them about a month ago and it looks like they will fit the bill for my next set of tires. I know release just happened, or is close , hence the lack of replies. If you get a set, let us know.
Unless you're planning on riding every gravel road you can find up here, the vast majority of your trip will be on asphalt paved roads. You really won't need a serious off-road tire, and the chip seal would eat up the tread anyway. A good tire would be a set of Tourances, Shinko's (although they don't last as long) or Heidenau's. Any of those is well-suited to your trip. Knobbies are fine, but not necessary.
If you're not set on having the same tire on both ends I'd run the TKC 80 front and the K60 rear. This combo has worked very well for me commuting, playing up at the cabin in a sandy state forest, and the muddy rocky national forest further north. I'm not that big of a fan of the TKC on wet pavement especially when it's colder. But it is tolerable if not all that confidence inspiring, the trade off is when things get soft and loose it shows it's strength.
I just got home from a very wet ride and I was really impressed with the K60 on the rear. My '09 Wee had a new one on the rear and a Trailwing on the front. I have bought a K60 for the front but have not put it on yet. This is my second wet ride and I thought the Scout handled very well.
