I am interested in trying and/or buying a DL1000 but have never even sat on one and would like to at least SIT on it before I consider buying one.

Go to "The Corral" and ask for Harvey. It's located on hwy 74 on left just before you enter Monroe. He usually rides his into work on better days.
It used to be a Suzuki dealership but now they just sell used bikes, parts and service. If you don't have any luck, I will gladly show you mine but it has a Russel seat and feels different than stock.

What difference will the seat make?

I'm 5,10 and a fatty with big gut

Also, I just saw that yours is a 2012. What's the difference between the 04 and 07 models and yours?
Seating position wise I mean.

Nothing really that I know of. I bought a used Russel for mine a couple of months ago and it has a different shape that makes the bike feel taller. The seat is wider for a better "spread" and long haul comfort. It will not feel comfy just sitting still on the bike and would give you a false impression of the bike's overall fit. My opinion. However, you are very much welcome to check it out.
Harvey is a great person and good to talk to. Call him and make sure his bike is there before you go. If the weather is good I may just ride over there, let me know!

Here's what I was thinking after I responded.
Considering Harvey sells bikes and I have already found
some that I really like, should I ask him to try his even though
I probably won't buy it there or just go ahead and sit on yours?
