Well this aint camping related, but good grub related that anyone can do. Now keep in mind that I was/am a prof. Chef.
A group of friends decided that they want to watch the Tour De France at MY house cause I got the bomb TV. I did not have much in the fridge, so I had to do my best Iron Chef imitation and it came out great!
Ingredients on hand:
Boneless chicken thighs
Bacon strips
Yellow bell pepper
Mixed greens from the garden
1 tomato
1 avocado
I cut each thigh in half, pepper in strips and bacon strips in half. I rolled each thigh with one piece of pepper in the bacon and toothpicked them. Made salad with the rest. I put the chicken rolls on a sheet pan and roasted @ 425 for about 20 minutes, took em out and drizzled with a little honey mustard and put them back in for 5-10 mins. They were awesome!!!
Now if you made these ahead and froze them, you could skewer them and roast them on the campfire sweet as you please!
