Bought some a few weeks ago. Went to slice it and realized it was pretty much all fat. What the hell do you use it for?

Don't know if it is the same thing.... but I grew up eating what is called "fresh side". It is real thick fatty bacon, that is very yummy. :D Jowel bacon is typically used for flavoring a big ole pot of fresh picked green beans and red potatoes. It is more for adding bacon flavor.... not actually eating. My Mother is from the hills of Eastern Kentucky, so I grew up eating pretty well.
